Tri-colour lentil stew with quinoa and sweet potato chips

Today's simple ingredient combo is ;

Green, black and red lentils, mushrooms, onions, carrots, celery, garlic, spinach, tomatoes, parsley and basil.

We cook this so often we end up throwing everything in a big pot and just cooking everything together. As for the lentils, we soak them and cook them together. The longer I cook them the creamier they get, the black ones always hold their shape better so it gives the stew a lovely consistency.
