Lets treat ourselves to a healthy ice cream treat after dinner.
This is quite simple to make, all you need is frozen bananas, coconut cream, and frozen blueberries.
Ingredients
- 1 oz can coconut milk, full fat
- 4 cups banana chunks, frozen
- 1/2 tsp vanilla bean powder
- 1/2 cup frozen or fresh blueberries
Instructions

In a high speed blender or food processor combine banana, coconut milk and vanilla bean powder

Blend until smooth

At this point you can fold in the blueberries and eat as is or transfer into an ice-cream maker and let it mix for half an hour like I did, this gives the ice cream a thicker consistency perfect for scooping

Once your ice cream is done fold in blueberries and serve
Store your ice cream in a glass container in the freezer
